A staple of the California Native diet was the acorn.
Gathered in conical baskets large enough to hold a bushel
or two, the nuts were shelled, dried on tule mats, and stored
in baskets. The acorns were ground on a hollowed stone
mortar with a pestle. A basketry hopper kept the meal from
scattering during grinding. Warm water was poured through
the meal so that bitter tannic acid would be leached out.
