PCC Tastings: Pacific Northwest Mushrooms with Becky Selengut

Tastings are scheduled at 11 am and 1 pm and include recipe demonstrations as well as sample bites of the featured cuisine. Seating is limited. Thanks to support from our sponsor, PCC Natural Markets, the Burke will host tastings throughout the run of the Hungry Planet exhibit.

Mushroom lovers are in luck for Pacific Northwest mushrooms are in abundance locally and regionally. Pacific Northwest mushrooms are very versatile and can be used in a variety of dishes. Learn more about cooking with Pacific Northwest ingredients in PCC Cooks instructor Becky Selengut’s recipe, spring vegetable risotto with fava beans, morels, and pea vines.

As a graduate of William Smith College and the Seattle Culinary Academy, Becky Selengut spent three years at the nationally acclaimed restaurant, The Herbfarm in Woodinville. She has started a private chef and instruction company, founded a Web site devoted to season and local foods, runs a blog and has a cookbook.
